Description

Yuzu is the most prized of Japan’s aromatic citrus fruits, valued less for its juice than for the extraordinary fragrance of its peel. This kokusan, or domestically grown Japanese yuzu, has its rind finely julienned while fresh, or nama, then immediately frozen to capture the volatile oils that make the fruit so special. The result is a delicate golden shred, tender and vivid, ready to lift a dish the moment it is scattered.

The aroma is the whole point, and it is remarkable, vibrant and zesty, far more complex than lemon, with perfumed, floral notes that recall grapefruit and mandarin at once.
