Where the Sea Meets the Table: Siena DIFC Chooses Sea House

In a neighbourhood that counts GAIA, La Petite Maison, and Zuma among its neighbours, standing out demands more than a beautiful room. Siena Dubai brings refined Italian dining to DIFC, where Parisian elegance meets the spirit of la dolce vita, and from the moment it opened its doors at Gate Village 7 in April 2026, it made clear that its ambitions were as serious in the kitchen as they were in design.

The menu celebrates Italian cuisine through exceptional seasonal ingredients and meticulously sourced produce, with seafood at its very centre. And behind it, a supply chain built on the same standards the kitchen demands.

That is where Sea House comes in.

The Chef, the Product, the Dish

Chef Stefano Cauzzo has spent over a decade building his name in Dubai. His philosophy is straightforward: quality does not negotiate, regardless of circumstance. When the time came to source the seafood that would define Siena’s menu, that same standard applied.

We had the privilege of seeing it first-hand. Cauzzo prepared his focaccina in front of us: the dough golden and impossibly light, stuffed with a Sea House Lobster Tail and a heart of Maison Revka Smoked Salmon. The lobster tail, sourced from the acclaimed cold waters of Canada and France, is firm, sweet and deeply flavourful. Paired against it, the smoked salmon heart, the most prized central portion of the Norwegian fillet, cold-smoked by Maison Revka with an expertise that needs no embellishment. The focaccina arrived at the table warm, with that particular silence that falls when a dish is simply, undeniably right. Stunning in its simplicity. Precise in every detail. A dish that could only exist with product of this quality at its core.

For Cauzzo, sourcing is not a logistics question. It is a culinary one. Sea House was the answer.

DIFC: the Most Demanding Table in Dubai

Siena is located at Gate Village 7, DIFC, a postcode that concentrates some of the most discerning diners in the region: finance professionals, international executives, culinary travellers who know exactly what they are eating and exactly what it should taste like. In this environment, the provenance of every ingredient is felt, even when it goes unspoken.

Seafood carries a margin for error that approaches zero. Temperature, freshness, traceability: a single compromise travels directly to the plate. It is precisely this pressure that makes the sourcing decision so significant, and the partnership between Siena and Sea House so deliberate.

The Supply Chain Behind the Signature Dish

A restaurant of Siena’s standing does not simply need seafood. It needs a partner who understands the rhythm of a professional kitchen: the volume requirements, the precision of delivery, the ability to source exceptional product consistently across species and season.

Sea House was built for exactly this. Operating from Dubai Maritime City and supplying five-star hotels and fine dining establishments across Dubai and Abu Dhabi, the company exists at the intersection of culinary ambition and logistical rigour. For Siena, it is not a vendor. It is an extension of the kitchen.

Two Standards, One Table

The finest seafood does not begin at the pass. It begins long before, in the choices made about where product comes from, how it is handled, and who delivers it. Chef Stefano Cauzzo understands this. It is why he chose Sea House.

We are proud to be the partner Siena chose.
