Description

The hoba is the broad, handsome leaf of the Japanese bigleaf magnolia, and one of the quiet treasures of the country’s mountain cooking. Gathered and carefully dried, each leaf is large and sturdy, its surface a soft silvery brown veined like parchment, releasing a warm, faintly resinous fragrance when warmed. For generations it has served the kitchens of the Hida region as both vessel and seasoning.

Its most celebrated use is hoba miso, in which a sweet, savoury miso is spread across a leaf and grilled slowly over embers until it caramelises and blisters, the leaf perfuming the paste with a gentle woodsmoke aroma. The same leaf lends itself to grilling and steaming fish, beef and vegetables, protecting the food from direct heat while scenting it from beneath, and it is equally valued as an elegant natural plate or wrapper.

Beyond its aromatic gift, the leaf carries natural antibacterial properties long recognised in traditional cooking. Dried and stored, it needs only a brief soak to become pliable, ready to be folded, filled and set over the flame.
