The shiitake is one of the most treasured mushrooms in the world’s kitchens, an edible fungus native to East Asia and prized wherever depth of flavour is wanted. In its dried form it is arguably even more valuable than fresh, for drying concentrates its savoury compounds into an intense, complex umami with a distinctive smoky, woodland aroma, alongside the firm, satisfying, almost meaty texture that makes it so useful.
To use, the caps are simply rehydrated in warm water until soft and supple, a process that also creates a second gift: the fragrant soaking liquid, a ready made mushroom stock rich in umami that should never be discarded. Once softened, the mushrooms are sliced and cooked, releasing their deep, savoury character into whatever they join.
They are endlessly versatile. Sliced into stir fries and noodles, simmered into soups and dashi, braised in stews, folded through risottos and sauces, they add a profound savoury backbone, and they are especially valued as a natural source of umami in vegetarian and plant based cooking, where they lend the meaty depth other ingredients lack. They are also nourishing, a good source of B vitamins, copper, selenium, and fibre. Stored dry, they keep for a long time, making them a dependable staple for any kitchen.
