Rice paper, known in Vietnam as banh trang, is one of the most elegant wrappers in Asian cooking, a thin, translucent sheet made simply from rice flour, water and salt. Recognisable by its delicate thinness, its near see through translucence and its faint, clean rice aroma, it is naturally gluten free and endlessly versatile.

Its defining quality is how it transforms. Straight from the pack the sheets are hard and brittle, but a few seconds in warm water turns them soft, supple and pliable, ready to be filled and rolled.
