Japan
Dashi is the savoury stock that forms the very foundation of Japanese cooking, and dashi no moto is the quick, convenient way to make it. This one comes from Marutomo, a leading Japanese maker of bonito products, and delivers a rich, deeply savoury flavour drawn from bonito fish extracts in an easy to use, quick dissolving granular form.
Its great advantage is speed and consistency. Where a traditional dashi must be brewed from kombu kelp and bonito flakes, a spoonful of these granules dissolves instantly in hot water to give a fragrant, umami rich stock in seconds, with the same savoury backbone every time.
It is endlessly useful across the Japanese menu, the base of miso soup and clear soups, the broth for udon, soba and ramen, and the savoury foundation of simmered nimono dishes, sauces, glazes and dressings. A pinch can also be used as a seasoning to lend instant umami depth to almost any dish. Supplied in an economical 1kg pack.
