Saikyo miso is the aristocrat of Japan’s white misos, a Kyoto speciality long associated with the refined cooking of the city’s finest establishments, and this one is expressly a kokyu ryotei grade, made for high end restaurant use. It is a rice miso fermented with an unusually high proportion of cultured koji to soybean and only a short maturation, which is the secret of its pale ivory colour and its remarkable, almost confectionery sweetness.
Where ordinary miso leads with salt, Saikyo leads with sugar and umami. Its salt content is notably low, its texture exceptionally smooth and creamy, and its flavour delicate, rounded, and gently sweet, closer to sweet custard than to the robust, funky reds. This is a miso to be used for finesse rather than force, prized precisely for its elegance and its pale, luminous colour.
Its signature use is saikyo-yaki, in which fish such as black cod, sea bream, or salmon is left to cure in the sweet paste for a day or two, then grilled until the sugars caramelise into a glossy, fragrant glaze. Beyond this it is the foundation of dengaku glazes for vegetables and tofu, of refined salad dressings and dips, and even of Japanese sweets, and it lends a soft, sweet depth to a delicate white miso soup.
