The hoba is the broad, handsome leaf of Magnolia obovata, the Japanese bigleaf magnolia, and one of the quiet treasures of the country’s mountain cooking. Gathered and carefully dried, each leaf is large and sturdy, its surface a soft silvery brown veined like parchment, releasing a warm, faintly resinous fragrance when warmed. For generations it has served the kitchens of the Hida region as both vessel and seasoning.
Its most celebrated use is hoba miso, in which a sweet, savoury miso is spread across a leaf and grilled slowly over embers until it caramelises and blisters, the leaf perfuming the paste with a gentle woodsmoke aroma. The same leaf lends itself beautifully to grilling and steaming fish, beef, and vegetables, protecting the food from direct heat while scenting it from beneath. It is equally valued as an elegant natural plate or wrapper for presentation.
Beyond its aromatic gift, the leaf carries natural antibacterial properties long recognised in traditional cooking, which is part of why it was historically used to hold and preserve food. Dried and stored, it needs only a brief soak to become pliable, ready to be folded, filled, and set over the flame.
