In Japanese, Amaebi means “sweet shrimp” and the name is entirely earned. These small but extraordinary cold-water shrimp, sourced from the pristine depths of Japan and Greenland, are among the most delicate and refined ingredients in the sushi world, cherished for a flavour and texture that no warm-water shrimp can come close to replicating.
The flesh is translucent and almost luminously white when raw, with a silky, yielding texture that dissolves on the palate with a clean, intensely sweet finish. A sweetness that is entirely natural, entirely oceanic, and entirely captivating. Served raw as nigiri or sashimi, Amaebi is at its most expressive. Nothing but the shrimp, a touch of soy, and perhaps the faintest whisper of wasabi to bring its extraordinary character into focus.
