Description

Miso is one of the great fermented foundations of East Asian cooking, a thick, savoury paste made by fermenting soybeans with salt and koji, the cultured grain that drives the slow transformation. The result is a concentrated store of umami, at once salty, savoury and subtly sweet, with the rounded depth that lifts a dish from good to memorable.

The two styles offer a chef distinct tools. White Miso, or shiro, is fermented for a shorter time and stays pale and soft, its flavour mellow, gently sweet and delicate, ideal where subtlety matters. Brown Miso is fermented longer and darker, deeper and more assertive on the palate, with a robust, almost meaty savouriness that stands up to bolder cooking.

Beyond the familiar bowl of miso soup, the paste is a versatile workhorse. It forms the base of glazes and marinades for fish and meat, the classic being a miso marinated black cod, and it deepens braises, dressings and dipping sauces. Its natural body also makes it a fine thickener and emulsifier, giving sauces a silky, cohesive texture while seasoning them.
