Soba are the classic Japanese buckwheat noodles, and this is the Shinshu style, named for the Nagano region long regarded as the heartland of great soba. Slender and pale brown, they are made with buckwheat and carry its distinctive character: a nutty flavour and an earthy aroma, with the slightly bitter, rich depth that is the hallmark of a proper Shinshu soba.

That genuine buckwheat taste sets soba apart from other noodles, more savoury and wholesome than plain wheat, and it is buckwheat that also makes them satisfying and nourishing. Supplied dried, they cook in just a few minutes and are then rinsed under cold water to firm up their texture and bring out their clean, nutty flavour.

They are enjoyed both cold and hot. In the warmer months they are served chilled as zaru soba, drained and piled on a bamboo tray with a tsuyu dipping sauce, as pictured on the pack. In cooler weather they are served hot as kake soba, in a fragrant dashi based broth, and they work equally well in soups and stir fries.
