The Baby Octopus is one of the most versatile and visually charming ingredients in the Mediterranean seafood repertoire. Wild-caught from the waters of Spain and known locally as Mini Pulpo, these small specimens offer everything that makes octopus such a celebrated ingredient, presented in a format that is as practical for professional kitchens as it is impressive on the plate.
Each baby octopus is recognisable by its purplish and greyish-brown mottled skin, with a clean, fresh oceanic aroma that speaks directly to the quality and freshness of the product. The flesh is firm and slightly chewy in its raw state, developing a beautifully tender, yielding texture when given the time and treatment it deserves. Blanched briefly and then grilled over high heat, they achieve a lightly charred exterior and a succulent interior that is deeply satisfying.
