The Pecten Maximus, or King Scallop, is the largest and most prized scallop species in European waters, and France’s Atlantic and Channel coastlines produce some of the finest specimens in the world. Celebrated by chefs across the finest tables of Europe, it is a shellfish of commanding presence and exceptional eating quality.
Each scallop delivers a generous, firm adductor muscle with a naturally succulent texture that holds beautifully under heat, yielding a tender, almost creamy centre when cooked correctly. The flavour is mild yet expressive, naturally sweet with a clean briny undertone that reflects the cold, nutrient-rich waters of its French origins. Seared at high heat to achieve a deep golden crust, gently roasted with herb butter, or served raw as a delicate crudo, the King Scallop performs with quiet authority across every preparation.
