Wakame is among the most beloved of all edible seaweeds, a soft, leafy sea vegetable cultivated across the coastal waters of Japan and Korea for centuries. In its dried form this cut wakame presents as dark, shrivelled ribbons carrying a concentrated marine aroma, and within a minute of contact with water it unfurls into supple, jade green fronds, tripling in size and softening to a silky, yielding texture.

The flavour is gentle and distinctly oceanic, clean and vegetal with a whisper of natural sweetness and a pleasing, slippery bite. Unlike the firmer kelps, wakame is prized for its tenderness, which makes it as pleasant to eat raw in a salad as it is simmered in broth. It is naturally rich in minerals and famously light, adding substance and colour without weight.
