Description

This is a Shinshu miso in the classic style, made in the mountainous Nagano region that gives Japan the greater part of its miso and lends its name to the country’s most widely loved type. Produced by Hikari Miso, one of the most respected houses in the craft, it is a rice miso fermented from soybeans and cultured rice koji, belonging to the pale, fresh school of shiro white miso rather than the dark, heavily aged reds.

The word shirokoshi speaks to its texture, a smooth, strained paste free of coarse particles, pale gold and soft enough to whisk cleanly into stock. Its aroma is fresh and lightly sweet, and the flavour follows suit, mellow and rounded with a restrained saltiness and a clean finish. This is a miso built for balance, umami forward without heaviness.

Its pale colour and gentle character make it the natural choice for a refined miso soup, where it keeps the broth bright and clear, as well as for light dressings, marinades and glazes that call for savoury depth without a dominating colour.
