Wood chunks are used to add a natural smoky flavour to food. Larger than wood chips, the chunks burn more slowly and release their smoke over a longer time, which makes them ideal for smokers, barbecues, and longer cooks where a steady, sustained smoke is wanted.
This product is offered in two of the most popular fruit woods. Cherry wood gives a mild, slightly sweet and fruity smoke with a gentle character and a pleasant reddish tone, while Apple wood offers a similarly mild, sweet, and fruity smoke that is soft and rounded. Both are gentle rather than heavy, making them especially well suited to delicate ingredients such as fish and seafood, as well as poultry, pork, and cheese. The chunks can be used dry or briefly soaked in water depending on the smoker and the intensity of smoke wanted, and a few pieces are enough to give a dish a natural, aromatic wood smoked character.
