Among the most revered fish in European fine dining, the John Dory — known in France as Saint Pierre — is a fish of extraordinary character. Its distinctive oval, compressed body, large expressive eyes, and dramatic spiny dorsal fin make it one of the most recognisable creatures of the deep. Most striking of all is the large black spot ringed with gold on each flank — a mark steeped in maritime legend, said to be the thumbprint of Saint Peter himself.
But it is what lies beneath this remarkable exterior that has earned the John Dory its place on the menus of the world’s finest restaurants. The flesh is firm yet delicate, brilliantly white, and carries a mild, slightly sweet flavour of exceptional refinement.
