Description

Hijiki is one of the most distinctive of Japan’s edible seaweeds, a wild sea vegetable that grows on the rocky coastlines washed by the Pacific and has been part of the Japanese table for well over a thousand years. Dried, it takes the form of fine, twig like black strands, glossy and brittle, that swell to several times their size when soaked and soften into a tender, pleasantly chewy texture.

Where the leafy seaweeds lean marine and fresh, hijiki is altogether deeper and more grounded. Its flavour is earthy and savoury, with a mushroom like note and a faint natural sweetness that rewards gentle simmering. It carries other flavours beautifully, drinking in the dashi, soy and mirin of a slow braise while keeping its own quiet, mineral character.

The classic preparation is hijiki no nimono, in which the rehydrated strands are simmered with carrot, fried tofu and soy until glossy and richly seasoned, served as a small side dish. It lends the same depth to rice, salads and vegetable dishes, adding colour, substance and a wholesome flavour.
